Eggless Whole Wheat Almond Muffins using Flax Meal

As our kids enter toddlerhood, a major pressure or rather confusion befall on us 
(parents) - what healthy snacks can I give my child? 

My son brings back almost half of the snacks that I send him for school. However, he loves cakes, sweets and biscuits which are quite unhealthy. I thought why not make them at home with healthy ingredients so that we can give them without any guilt or fear. This is one such recipe which uses the goodness of whole wheat, Almond flour, flaxseed and butter. This makes a healthy wholesome delicious snack for kids any day.

This is one of my son's favorite snacks. He says Yummy yummy and eat it. That feeling you get when you know your kid is enjoying what you cook for him is such a state of bliss :)

This recipe is an adaptation of SharmisPassions-WholeWheat Almond Muffins. I have replaced the egg in original recipe with flax egg.

                        1 egg = 1 tbsp Flaxseed Powder dissolved in 3 tbsp of water




Yields 9 cup cakes

Ingredients

Dry Ingredients

  1. Whole Wheat flour - 3/4 cup
  2. Almond Flour - 1/4 cup
  3. Baking Soda - 1/4 tsp
  4. Cane Sugar/Organic Jaggery - 1/2 cup
  5. Cinnamon Powder - 1/2 tsp (Optional)

Wet Ingredients

  1. Flax Egg - 1 tbsp Flaxseed Powder dissolved in 3 tbsp of water (rest for 15 mins)
  2. Boiled Milk - 1/2 cup
  3. Unsalted Butter - 1/4 cup
  4. Vanilla Essence - 1 tsp


Method

1. Sift all the dry ingredients in a large mixing bowl and mix well.

2. Now add all the wet ingredients and mix well using a hand mixer or Blender until the wet ingredients and dry ingredients are combined well.

3. Line a cupcake liner inside silicon moulds. Alternatively, you can use a muffins tray if it would fit inside your oven.

4. Fill each of the mould upto half of the volume as the batter would rise during baking process.

5. Once filled, decorate them with your choice of sugar sprinklers as shown in the pic.


                          

6. Preheat the oven at 180 degrees celsius for 10 mins.

7. Place the cupcake tray inside the oven and bake for 30 mins at 180 degrees Celsius.

8. After 30 mins, remove the cup cake and allow it cool to room temperature.

9. Can be refrigerated in an airtight box for about a week.

10. Keep one daily for your toddler in his/her snack box and see them glee :)



Notes,Tips & Add-On's

  1. Each oven temperature and heating capacity is different. My oven cooks only after 30 mins. However, I request you to keep checking on the cup cakes every 10 mins.
  2. Gently press the top of the cake to see if it is firm, alternatively you can also use tooth pick to check if the cake is cooked in the center. The tooth pick has to come out clean.

Dhoodh/Milk Peda

Who doesn't love milk sweets....:):):)
This is one of the easiest milk sweets that can be made instantaneously. This sweet is usually made as prasadham(offering to god) . For a long time, I wanted to make Peda for my dear god Sai baba. I made this on a Thursday and offered as naivedhya/Offering to the god after doing pooja. Any offering that is made with pure devotion all by ourselves to god definitely gives us pleasure and immense happiness:). Now let's look at the preparation. 






Serves: 30 Pedas

Ingredients

  1. Condensed milk - 1 tin / 400 gms(Milkmaid or any other brand)
  2. Milk Powder - 200 gms( Amul or any other brand)
  3. Ghee - 2 tbsp
  4. Cardamom powder - 1 tbsp
  5. Almonds for decoration



Method


1. In a thick non stick pan, add ghee and empty the condensed milk tin and milk powder.

2. Stir continuously on low flame until there are no lumps and powder gets mixed well with condensed milk.

3. Add cardamom powder and keep stirring until the mixture thickens and leaves the side of the pan. 

4. Stir till the mixture thickens and forms a soft dough texture.

5. Switch off the flame immediately and transfer the contents to a plate greased with ghee.

6. Grease your palms with ghee, make small balls out of the dough and slightly flatten them. Place an almond in the center.

7. Delicious Pedas ready to be served now:)


Notes,Tips & Add-on's

  1. Instead of almonds, you can use pistachios or cashews for decoration.

Kaju Paneer Pulao

Finally,I come up with a very special recipe after a gap.I am sorry for posting it after a long break.This recipe is taken from Sanjeev Kapoor's kitchen Kaju Moti Pulao. I made this for dinner. It turned out really delicious. Kaju and Paneer make the richest combo in a vegetarian meal.This make a sumptuous main course. This is sure to be a feast to your taste buds. This is a very simple and rich recipe with No onion, garlic or any masala. This is so flavorful and gentle on stomach  - Sattvik Cuisine.


serves:2-3

Ingredients

  1. Cashew nuts- 10
  2. Paneer/Cottage Cheese-250 gms(grated)
  3. Basmati rice-1.5 cups
  4. Salt to taste
  5. Cornflour- 3 tsp
  6. Oil for frying
  7. Ghee- 3 tbsp
  8. Cumin seeds- 1 tsp
  9. Black cardamoms- 2
  10. Cloves- 2
  11. Cinnamon stick-1
  12. Black peppercorns- 4
  13. Turmeric powder-1 tsp
  14. Milk- 3 cups


Method

1. Add salt and cornflour to the grated paneer and shape into small marble-sized balls. Heat sufficient oil in a pan and deep-fry the paneer balls till golden. Drain on absorbent paper and keep it aside. In the same oil, deep-fry the cashew nuts till light golden. Drain on absorbent paper and keep it aside.

2. Heat the ghee in a non stick pan, add the cumin seeds, cardamoms, cinnamon,cloves, peppercorns and turmeric powder. Saute for one minute.


3. Drain the rice and add it to the above content. Add milk and cook the rice as mentioned here.

4. Once the rice is done, add the fried cashews and paneer balls on top and give it a gentle mixture.

4. Transfer the rice onto a serving plate, garnish with the paneer balls and serve hot.

Notes,Tips & Add-on's

  1. You can also use coconut milk instead of normal milk. This gives additional flavor and taste.

Masala Milk (Kesar Badam Pista Milk)

I remember having this masala milk for the very first time at hot chips. Masala milk or otherwise known as kesar badam pista milk will be served super hot at this restaurant.Here is a rich beverage that can be served as a dessert when you call someone for dinner.This can be served either hot or cold.This is very good for cough and cold when served hot.



serves: 2 big glasses

Ingredients

  1. Milk- 1 litre
  2. Sugar- 5 tbsp
  3. Saffron-4-5 strands
  4. Nutmeg powder-a pinch
  5. Green Cardamom powder-1/4 tsp
  6. Almonds-10-15 (Blanched and Coarsely ground)
  7. Pistachios- 10-15 (Blanched and Coarsely ground)

Method

1. Heat the milk in a thick bottomed pan. Once it comes to boil, reduce the flame to low.

2. Stir the milk constantly in low flame till the milk thickens and volume reduces.

3. Add Sugar and stir continuously till the sugar dissolves.

4. Add the cardamom powder, nutmeg powder and saffron and mix well on low flame for 2-3 mins.

5. Add the ground almond and pistachio paste to the milk and mix well.

6. Serve the milk either hot or cold seasoned with few crushed almond and pistachio pieces.


Notes,Tips & Add-On's

You can add a tsp of turmeric while serving hot.This is very good for cold,cough and phlegm.Also,it gives nice yellow color to the drink.

Cream of French Onion

This is one of the most favorite soup for both my husband and myself. I remember having this soup for the very first time at Hotel Saravana Bhavan in chennai.I was completely addicted to its  rich creamy taste.Unfortunately, this soup has been removed from the menu card and I no longer find them serving this.Whichever restaurant i go, i hunt for this soup in the restaurant menu card and its always missing.Then I decided, why not make this soup at home and relish it to heart's content.I prepared this soup for my husband's birthday and he liked it so much.

This recipe is completely conceived by me after several trials and attempts. I did google for various french soup recipes across globe and then came out with the vegetarian version of this soup that is sure to leave you cheese bombed. Trust me, this is a fool proof and a tested recipe that came out really well and delicious.  Try out this soup right away and let me know your feedback in comments.



serves:4 -5 bowls

Ingredients

  1. Onions- 2 Medium (thinly sliced lengthwise)
  2. Spring onions- 3 (onion part thinly sliced)
  3. Spring onion greens - 2 tbsp (chopped finely)
  4. Sugar - 1 tsp
  5. cashews - 2 tbsp
  6. Maida/All purpose flour - 2 tbsp
  7. Butter-2 tbsp + 2 tbsp
  8. Processed Cheese- 2 cubes( I used amul cheese cubes)
  9. Fresh Cream - 200 ml
  10. Milk - 1 Cup
  11. Water - 1 cup
  12. Garlic paste - (4 garlic pods ground with little water)
  13. Salt and pepper to taste

Seasoning

  • Bread-2(corners removed and sliced into desired shape)
  • Butter-2 tsp
  • Cheese grated - 2 cubes

Heat Butter in a pan

Fry Cashews until light golden brown

Set aside for final garnishing

Fry Onions until caramelized

Preparation of soup base

Toast bread circles on pan with butter

Add grated cheese

Close and simmer for cheese to melt



Method

1. Heat 2 tbsp of butter in a pan, Add the cashews and fry them on medium low flame until they turn light golden brown in color. Keep it aside for final garnishing.

2. Add both onions ,spring onions (both greens and onions) and sugar and saute on a slow flame for 5-6 minutes till the onions shrink and turn golden brown. Sugar helps the onions to get caramelized(as shown in the pic).

2. Keep the caramelized onions separately.


3. Add 2 tbsp butter again and add maida, garlic paste and roast them in butter.

4. Add milk, fresh cream and cheese cubes and give it a nice mixing. Ensure the maida mixes with milk without any lumps. Keep the flame in medium for the soup to reach a thick creamy consistency.

5. Add required salt and pepper and stir well.


6. Toast the bread slices with butter in a pan till it becomes crisp and slight golden brown on both sides. 

7. Add grated cheese on to the bread and cover lid for the cheese to melt.

Serving Method

Take a bowl of the prepared soup, add some caramelized onions, fried cashews, top it with cheese bread slices and serve hot :) Gooey cheese french onion soup is all ready to be relished :)
